Caramel Corn

Mix the following ingredients in a cooking pot:

2 cups light brown sugar
1/2 cup light corn syrup
1 cup of butter
1/2 tsp. cream of tartar
1 tsp. salt

Cook this mixture on the stove until it reaches 260 degrees.  Remove from heat and add 1 tsp. baking soda.  Mix well.  Put 6-7 quarts of popped corn on large cooking sheets.  Spread the candy mixture over top of popcorn.  (Don't worry if it does not cover the popcorn entirely.)  Bake at 200 degrees for one hour, stirring every 15 minutes to mix the corn and candy well.  Turn finished caramel corn out of cookie sheets and break it up after it cools.  Store in airtight container (if it lasts that long!).
