Alaska (serves 4-6) -

slices of christmas pudding or cake -

tablespoons of brandy or sherry -

scoops of vanilla icecream -

of double cream -

egg whites -

caster sugar Arrange
the pudding or cake slices on an ovenproof plate, sprinkle with the brandy or
sherry. Pile the icecream on top. Whip the cream until thick and spread over the
icecream. Place in the refrigerater or freezer while you make the meringue. Beat
the egg whites until stiff. Add 3 tablespoons of the sugar and continue beating
for 1 minute. Fold in the remaining sugar. Completely cover the cream, icream
& pudding or cake with the meringue. Cook in pre-heated oven 200C/400F Gas
6 for about 3 or 4 minutes or until the meringue is just golden brown. Serve immediately. 
Mincemeat
Cake (serves 4) - 100g
butter or margerine
- 100g
light brown sugar
- 3
large eggs
- 200g
wholemeal self raising flour
- 350g
mincemeat
- 150ml
milk
- pinch
of salt
Beat
the butter or margerine, sugar and eggs together. Add the flour, mincemeat, salt
and milk and continue beating until well blended. Turn into a 20cm round cake
tin and bake in a pre-heated oven at 160C/325F Gas 3 for 1 and a quarter hours.
Leave in the tin for about 5 minutes, turn out and cool on a wire rack.

Years Eve Cake (serves 8) -
100g butter
or margerine
- 100g
caster sugar
- 2
large eggs beaten
- 75g
plain all purpose flour
- 45ml
desiccated coconut
- 30ml
rum
- 2
drops almond essence
- 2
drops lemon essence
- 2
drops vanilla essence
Cream
the butter and sugar until fluffy, gradually beat in the eggs then gently fold
in the flour and coconut. Add the rum and flavorings. Oil a 15cm deep cake tin
and line with greaseproof paper. Oil again and dust with flour. Fill the tin with
the mixture almost to the brim. Bake in pre-heated oven at 190C/375F Gas 5 for
45-50 minutes. Invert the tin onto a wire rack. Unmould only once cake has cooled.
Leave to settle overnight before serving. More
