The reason why I twist it slightly at this state is I don't want the koi to come out looking exactly like the last one. If we left the sushi roll alone it would come out like sushi, all the slices looking identical. This way we get that randomness that you find in nature. Next is to "reduce" the log and cut it in half, we are aiming for mirror images here.
