Sorry for the blurry picture here but this is not rocket science. Here we've taken that twisted sushi roll and reduced it. That is when you press in on the log as you are pulling it in opposite directions. Different folks have different methods. I wouldn't roll it out but rather caress it in opposite directions. When you roll a log like this to reduce it you could distort the spots too much.

Once you get the twisted sushi log reduced to the diameter of a dime or so, you cut it in half. You lay the two halves next to each other with the thickest part of the outer clay touching each other in the middle. This will give you that dorsal definition I was typing about a couple of pages back.

You reduce that roll again so those two sides are ying yanged together. Once done, you cut disks from that roll.
