Welcome to the heart of my home!! Mmmmmmmmmm!! Don't you just love the smell of fresh baked goodies?!? I love to cook and enjoy baking!! Anytime you drop by you'll always find some kind of pie, cake, cookies or bread to nibble on!! I love trying new recipes!! I am always clipping recipes that sound tasty to try or begging recipes from friends after tasting something yummy!!
I guess I got my love of cooking from my grandmother!! My fondest memories are the ones where she tied a big apron on me, gave me a chair to stand in and my own dough to knead and shape!! She was a wonderful cook and I try hard to make the special holiday dishes just like she used to!! Oh, my wonderful daddy fed my love of cooking too *S* He introduced me to the wonderful old southern cooking with ham hocks and fat back!! He shared his secret for cooking his famous "Green Turkey", his pet name for his favorite greens.....collards!! You won't find that recipe here because that was ours, but you will find lots of other wonderful recipes to try as well as lots of wonderful links to other sites!!

So...help yourself to a cup of coffee and whatever freshed baked goodie you see and wander around my cozy little kitchen and browse through my recipes!! Some are from old recipe books that have been passed down through the years, some are clipped out of magazines and newspapers and some have been shared by dear friends!! I try to change the recipes on a bi-weekly basis as time allows, sometimes that's not possible when you have 2 in diapers *S* I hope you find one or two that you would like to try......if you do please drop me a line and let me know how you liked it!! Oh and if you have any you'd like to share, I'd be glad to have them!! Thanks for stopping in to check out my recipes!!




Cheeseball
2 - 8 oz. cream cheese
4 green onions chopped (only the greens)
1 Tsp garlic salt
1 Tsp paprika
1 Tblsp mayo
3/4 Tsp dry mustard
1 Tsp worchester
1/2 Tsp ground red pepper
1 Tsp tabasco
1/2 Tsp accent
Soften cream cheese, mix well....moisten hands, roll into ball (or logs).
Roll in chopped nuts (pecans, walnuts, whatever your pleasure)
Has alot of spices, but if you have most of them already, it is very inexpensive and easy.



Avocado Salad with Bacon
1 pound bacon
3 to 4 ripe avocados
4 tender stalks celery
A piece of leek
3 to 4 hard cooked eggs
2 tomatoes, cut in wedges
Dressing
5 tablespoons oil
2 tablespoons tarragon vinegar
1 clove garlic, crushed
2 teaspoons light French mustard
1 to 2 teaspoons Italian salad spices, or 1 teaspoon herb sault
Fry bacon in a dry pan until crisp. Place bacon on a paper towel so that fat drains off. Divide avocados in half and remove pits. Peel the halves and cut them into slices.
Alternate sliced avocado, celery, leek, bacon, egg slices, and tomatoe wedges in a salad bowl.
Mix dressing ingredients together and adjust the seasonings. Shake up the dressing and pour it over the salad. Makes 4 servings.




Peasant Bread
2 cups all purpose flour
2 packages dry active yeast
1 3/4 cups water
1/4 cup dark molasses
2 tablespoons cooking oil
2 teaspoons salt
1 1/2 cups rye flour
1/2 cup whole bran cereal
1/3 cup yellow cornmeal
1 tablespoon caraway seed
In a large bowl combine 2 cups all-purpose flour and 2 packages active dry yeast. Heat 1 3/4 cups water, 1/4 cup darl molasses, 2 tablespoons cooking oil, and 2 teaspoons salt just til warm. (115 to 120 degrees); stir constantly. Add to flour mixture. Beat at low speed of electric mixer 1/2 minute, scraping bowl. Beat 3 minutes at high speed. Stir in 1 1/2 cups rye flour, 1/2 cup whole bran cereal, 1/3 cup yellow cornmeal, 1 tablespoon caraway seed, and as much of 1 to 1 1/2 cups al-purpose flour as you can mix in with a spoon. On a lightly floured surface knead in enough remaining all-purpose flour to make moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball in a greased bowl; turn once. Cover; let rise in a warm place till double (1 to 1 1/4 hours).
Punch down; turn out onto a floured surface. Divide in half. Cover; let rest 10 minutes. Shape into 2 loaves; place in two greased 8X4X2-inch loaf pans. Cover; let rise till nearly double (30 to 40 minutes). Bkae in a 375 degree oven 35 to 40 minutes. Makes 2 loaves.



Fettucine
1 pound italian sausage
1 can cream of chicken soup
2 c. sour cream
1 pkg of fettucine
Cook fettucini and drain.
Cut up Italian sausage into small pieces. Brown sausage over medium high heat for about 8 minutes. Place on paper towel to drain grease.
Mix all ingredients together. Put into a 6"x18" pyrex dish.
Bake 30 minutes at 350º.





Pears Poached in Red Wine
4 firm ripe pears with stems
1 tablespoons lemon juice
1 1/2 cups rose' wine
3/4 cup sugar
1 cinnamon stick
4 cloves
3 strips lemon peel
Lemon slices
Skin, halve, and core pears, leaving stems intact. Place in water with lemon juice to prevent darkening. Combine wine, sugar, cinnamon, cloves, and lemon peel in large skillet. Heat to boiling, stirring to dissolve sugar.
Drain pear halves; add to skillet. Poach over low heat 10 to 15 minutes, until fork-tender (not mushy). Chill (in syrup); serve garnished with lemon slices. Makes 4 servings.





Chicken Cacciatore
1 (3-pound) chicken
3 tablespoons vegetable oil
1 clove garlic
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon rosemary
6 anchovy fillets, chopped
1/3 cup wine vinegar
1 1/3 cups dry red wine
3 tablespons tomatoe paste
1/2 cup chicken bouillon
Cut chicken into serving pieces. Heat oil in large frying pan; saute' chicken and garlic 5 minutes. Turn chicken often. remove garlic. Add salt, pepper, rosemary, anchovies, vingar, and wine. Simmer, uncovered, until liquid is reduced by one-third.
Dissolve tomatoe paste in bouillon; pour over chicken. Simmer, covered, 20 minutes or until chicken is done. Makes 4 servings..



Baked Cod
1 pound cod fillets -- cut into 2" pieces
1 can {14 1/2 oz.} diced Italian-style tomatoes -- drained
2 tablespoons chopped pitted ripe olives
1 teaspoon minced garlic
2 tablespoons chopped fresh parsley
Preheat oven to 400 degrees.
Spray 13 x 9-inch baking dish with nonstick olive oil cooking spray. Arrange cod fillets in dish; season to taste with salt and pepper.
Combine tomatoes, olives and garlic in medium bowl. Spoon over fish.
Bake 20 minutes or until fish flakes when tested with fork.
Sprinkle with parsley. Serving Size : 4
