Rocky Mountain Way, by Joe Walsh


For over 25 years, Josephina's has been serving delectable Italian fare, in the Historic Larimar Square area of Denver. Josephina'sThe restaurant is located in the 100 year old Frontenac Building. Over the years, the building has housed many different businesses, including second hand stores, a barbershop, and even a dancehall and speakeasy. This speakeasy is part of what brings a charm to this dining establishment. Employees and guests have reported feeling and seeing a presence that could best be described as a ghost. Legend has it that during the days of the speakeasy, there was a young showgirl named Amelia, whom eventually married the owner of the business. They had a daughter, Ginger, whom Amelia cherished. When Ginger went against her fathers wishes, and dated a young man, that was believed to have underworld connections, Papa arranged for a hit on the suitor. Unfortunately, both the young man and Ginger were killed. The news of the tragedy was delivered to Amelia, as she was sitting in the rear of the speakeasy. This is the area in which her presence is most greatly felt.

The Denver Museum of Natural History is the largest cultural attraction to the city, and includes Denver Museum of Natural Historydisplays and exhibits that will take a full day to view and explore. Of particular interest is the Hall of Ancient Peoples, that examines early man and civilizations. The Hall of Life takes an in depth look at the human body. The Gates Planetarium offers a changing star program, and explores the galaxy. A favorite for young and old alike, is the "Prehistoric Journey" dinosaur exhibit. Guests walk though an environment that replicates the time of dinosaurs, even down to the vegetation and bugs! Over ninety dioramas have been created, highlighting different animal species from around the world. If you still have a bit of time left to the day, after exploring the permanent exhibits, stop by the special exhibit that the museum hosts on a regular basis. Past, traveling exhibits have included "Ramses II" and the "Imperial Tombs of China."

The Museum of Outdoor Art combines art, architecture, landscaping,and education Mother and Childprograms in a 400-acre park that includes an office complex. The park was founded in the late 1970's by John Madden, Jr., a real estate developer and art collector. He brought pieces of his art collection to his business communities, to make them more visually appealing. The collection is a eclectic mix of 55 pieces of art, that includes six life-sized bronze figures from an Alice in Wonderland series, and 12th and 13th century Italian lions. Local Colorado artists are represented as well. As popularity of the park has grown, outdoor cultural events have been held that highlight the performing arts. The annual All Colorado Art Show is held here annually, and concerts are performed on the grounds during the summer months.

Six Flags Elitch Gardens Amusement Park is located in the downtown area of Denver. The park had Six Flags Elitch Gardenshumble beginnings back in 1890, when the Elitchs turned a small apple orchard into baseball fields and picnic areas. It was the first location for the city zoo, and opened a theater that ran productions for 96 years. The original carousel, complete with 67 handcarved wooden horses, was installed in 1925, is now restored and a focal point of the park. The caliber of the rides has changed though, and now includes roller coasters that are sure to turn your stomach upside down, including The Mind Eraser, Boomerang, and Twister II.

The Buffalo Bill Museum and Gravesite is the final resting place of famous frontier scout and pony Buffalo Bill Codyexpress rider, William F. Cody. Located on Lookout Point, the grounds overlooks the Rocky Mountains, offering a spectacular view. The Museum was founded in 1921 by Johnny Baker, Cody's foster son. It looks at the life of Bill Cody, who experienced life to it's fullest. You'll learn how he earn the name of Buffalo Bill, from his buffalo hunting days. A collection of memorabilia that spans his various careers, including costumes from his Wild West Show, gun collections, and Sitting Bulls bow and arrows are on display. An additional treat, is the drive up to the museum, which follows a long stretch of winding highway. There are pull-offs located along the way, to allow you time to enjoy the panoramic views of the Mountains and plains.


Josephina's
Portobello Salad

2 T Olive Oil

1 oz. Red Onion, julienned

1/2 t Garlic

1/2 t Shallots

1 pinch Crushed red pepper flakes

1 T Balsamic Vinegar

2 T Red Wine

2 oz. Roma Tomatoes

1 T Basil Pesto

2 T Butter

1 each Grilled Portobello Mushrooms (or 2 small)

1/2 T Fresh Basil

2 T Gorgonzola Cheese

1/2 c Field Greens

Grill mushrooms. Saute the onion, garlic and shallots together, then add the remaining ingredients, finishing with butter. Place greens in center of plate and top with a mushroom. Drizzle the sauce over the top of the mushroom and then sprinkle the plate with gorgonzola cheese.
