The #1 salad in Egyptian salads. It is easy, cheap and forms the basis of a lot of other dishes.
It is served with everything and is a must in the Egyptian kitchen. You will find
it in Oriental/Middle East speciality shops. Excellent for veggies.
~Ingredients~
Add a little water gradually to tehina while stirring constantly to dilute it.
Add lemon juice and vinegar. Mixture should be thick and creamy. Remember that
a thin, runny tehina is a failed one. In mortar, paste garlic, salt, pepper, paprika and cumin.
Add to tehina and mix very well to obtain a lump-free smooth mixture.
Put in a bowl and sprinkle with a very thin film of corn oil,
without mixing, and a pinch of cumin.
