(Coating Batter)

This batter is excellent for coating fish & seafood before frying for very crisp results. Also, it is excellent for coating vegetables and fruits. Why don't you try it for pancakes?


~ Ingredients ~
1 cup milk
2 eggs
3 tbsp all-purpose flour
pinch salt

Mix flour and salt , then sieve. Make a well in the middle and add the eggs. Pour 2/3 cup milk, and beat very well with wooden spoon until sauce becomes rather thick and free from any flour lumps. Keep beating for another 10-15 minutes until sauce is light and filled with air.
Set aside for at least half an hour to rest in an airy place. Before using, add remaining milk and beat for 5 minutes.
Use as directed.
Yields 1 ½ cup.
