This batter is excellent for coating fish & seafood before frying for very crisp results. Also, it is excellent for coating
vegetables and fruits. Why don't you try it for pancakes?
~ Ingredients ~
Mix flour and salt , then sieve. Make a well in the middle and add the eggs. Pour 2/3 cup milk, and beat very well
with wooden spoon until sauce becomes rather thick and free from any flour lumps. Keep beating for another 10-15 minutes
until sauce is light and filled with air.
1 cup milk
2 eggs
3 tbsp all-purpose flour
pinch salt
Set aside for at least half an hour to rest in an airy place. Before using, add remaining milk and beat for 5 minutes.
Use as directed.
Yields 1 ½ cup.
