Veggies can omit cheese and butter and have a very tasty and nourishiong soup.
~ Ingredients ~
In a pan, heat oil and add chopped onion, garlic and diced celery sprig. Keep stirring until onion becomes golden. Add diced tomato
and 1/2 cup water. Bring to boil.
1 cup black lentils
1 medium onion chopped
1 celery sprig diced
1 tsp chopped celery leaves
1 tomato diced
1 tsp butter
1/2 tbsp corn oil
1/2 tsp chopped garlic
1 tsp cumin
2 tbsp grated cheddar cheese
grilled toast
salt & pepper to taste
Clean black lentils by picking any dirt. Wash and drain. Place in a pan and cover with water. Put over medium heat and leave until cooked.
Drain and add to previous mixture. Add chopped celery leaves and cover with water. Bring to boil. Season with salt, pepper and cumin.
Thinly butter grilled toast and place one piece in each bowl. Pour boiling soup over toast and sprinkle with grated cheese.
Serve immediately.
