~ Ingredients ~
Wash chicken thoroughly with salt and flour. Rinse, cut into serving pieces and place in saucepan.
Add water, cardamon, mastic, onion and celery. Place over medium heat and leave to cook, half covered, for
about 1-2 hours. Remove foam as soon as it forms.
1 small chicken
8 cups cold water
1 onion cross-cut
2 cardamon seeds
2 cloves mastic
1 tbsp flour
juice of 2 lemons
salt & pepper to taste
When chicken is cooked, drain from liquid. Leave to cool then cut into small pieces.
Cool liquid then remove fat layer and sieve. Mix flour with some cooled liquid.
Return liquid to heat and bring to boil. Add flour mixture gradually, mixing well. Keep stirring
until soup thickens. Remove from heat, season, add chicken pieces and return to heat.
Leave for 15 minutes over medium heat. Add lemon juice and leave for another 5 minutes.
Remove from heat and serve.
