~ Ingredients ~
In a saucepan, heat butter
then add chopped onion. Stir until transparent and add diced tomatoes.
Stir and leave to simmer on medium heat until water is evaporated and fat surfaces. Add flour and mix well until it is completely
absorbed.
1 tbs butter
1 small finely chopped onion
1 tsp all-purpose flour
2-3 cups stock
3 tbsp milk
1 bayleaf or 1 girofle clove (optional)
salt & pepper to taste
grilled toast or chopped parsley for serving
Add stock gradually while beating well. Season with salt and pepper. Add bayleaf or girofle if using.
Leave half covered on low heat for approx. 30 minutes. Pass through sieve or blend. Add milk and return to heat. Bring to boil.
Serve with grilled toast or sprinkle with chopped parsley.
