Cheddar Potato Frittata

Mashed Potatoes

ingredients

4 medium red potatoes (about 1 3/4 lb.), quartered
1/2 cup milk
1/4 cup butter
1 1/2 tsp. salt
1/4 tsp. pepper


directions

Cook potatoes in boiling water covered for 15 minutes, or until tender. Pour off water, leaving potatoes in saucepan; return to heat and shake over heat briefly to evaporate water.

Remove from pan and mash potatoes with a potato masher. Add milk, butter, salt and pepper and mash well. Serve hot.
