Quick and Easy Casserole
- delicious garlic flavor.
1 lb ground beef
2 cups uncooked macaroni
1/2 cup chopped onion
1/2 cup chopped green pepper
1 clove garlic
1/2 cup of vegetable (cooking) oil*
2 & 1/2 cups Tomato juice
1 tsp. salt
1/4 tsp. pepper
2 tbsp Worcestershire sauce

Chop the garlic, removing the peel. This is a little tedious. Chop the onion.
Brown the ground beef while chopping the green pepper and browning the macaroni, onion, green pepper and garlic in the oil until the macaroni is yellow or at least warmed up. Stir; don't let the macaroni get fried or it will not absorb the tomato juice very well later on. Let the completion of the browning of the ground beef signal sufficient warming-up of  the macaroni.
Turn the oven on and set it to 350 degrees Fahrenheit (F - standard on stoves).
Bring the remaining four ingredients (tomato juice, salt, pepper and Worcestershire sauce) to a boil.
Consider straining the oil out of the macaroni and vegetables. I haven't done this, but I think it may help make the final result less greasy.
Mix everything together in a casserole dish and cover. Cook 30-40 minutes at 350F.

Yields about five servings (of about one and a half cups each).

*don't use rancid oil. Trust me on this one. Fresh oil is pretty much tasteless, but rancid oil has a strong bitter taste.
