EASY BEER BREAD
2 c. self rising flour
3 tbl. sugar
12z beer
1 tbl. melted butter
Combine flour, sugar and beer.
Stir until all ingredients are moist.
Pour into greased 9x5x3" loaf pan.
Bake 375° for 30-35 min.
Brush with melted butter.

SKILLET PORK CHOPS
4 pork chops
2 c. onions, sliced
16z bag sauerkraut
12z jar pork gravy
16z bag frozen butternut
squash chunks
Heat a large nonstick skillet.
Add pork chops and brown 2 min. per side.
Remove pork.
Put onions in skillet and
cook 5 min. until lightly browned.
Add a rinsed bag of sauerkraut,
jar of gravy and squash.
Cover, reduce heat to simmer 8 min.
Stir, top with pork chops,
cover and simmer 4-5 min.
until pork is no longer
pink near the bone.

PUMPKIN CHOC. CHIP PECAN COOKIES
1 c. shortening
1 c. sugar
1 large egg
1 c. canned pumpkin
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
16z choc. chips
1 tsp. vanilla
1/2 c. pecans
Combine flour & soda, powder, salt and cinnamon.
Stir in vanilla, chips and nuts.
Drop dough by tbl. onto lightly greased cookie sheet.
Bake at 350°F for 13 min.
Remove to wire rack.
Cool completely.

PUMPKIN SWIRL CHEESECAKE
2 c. vanilla wafer crumbs
1/4 c. marg., melted
8 oz cream cheese
3/4 c. sugar
1 tsp. vanilla
3 eggs
1 c. canned pumpkin
3/4 tsp. cinnamon
1/4 tsp. nutmeg
Combine crumbs and marg.
Press onto bottom and sides of 9" springform pan.
Combine cheese, 1/2 c. sugar and vanilla,
mixing at med. speed on electric mixer until well blended.
Add eggs, one at a time, mixing well after each addition.
Reserve 1 c. cheese mixture;
add pumpkin, remaining sugar and spices
to remaining cheese mixture.
Mix well.
Layer half of pumpkin mixture and half
of cheese mixture over crust; repeat layers.
Cut through batter with knife several times for marble effect.
Bake at 350° 55 min.
Loosen cake from rim of pan;
cool before removing rim of pan.
Chill.
