Potato with Fenugreek Leaves

        • Potatoes- 1/2 lb (peel & cut into cubes)
        • Fenugreek leaves- 1/2 cup (vendaya keerai)
        • Garlic- 2 cloves
        • Green chili- 1 (chopped)
        • Turmeric powder- 1/4 tsp
        • Chopped cilantro (coriander) leaves
        • Oil
        • Salt

        Soak the fenugreek leaves in water with little salt for 30 minutes. Drain and chop it. Heat oil in a pan and add green chili & garlic and fry for few seconds. Add fenugreek leaves and fry for couple of minutes. Then add potatoes, salt & turmeric powder. Fry for few minutes. Sprinkle little water. Cover the pan. Lower the heat and cook until the potatoes are done. Garnish with chopped coriander leaves.
