  "Food is the first necessity of people"- that was an old Chinese saying. Food is the first necessity for human survival. The Chinese always consider eating as
enjoyment in life. There created many techniques for their cooking. China, with a
large land and complicated climates, can breed many different animals and plants,
which provided favorable natural conditions for developing Chinese-style food
and cookery. Chinese food is a part of the composition of Chinese ancient
civilization. The colorful dishes have formed many cooking techniques and varied
flavors. There are many various cuisines from different part of China. The two
main that I will explain about is the Beijing cuisines and the Cantonese cuisines.

   The Beijing cuisine (also known as the Mandarin cuisine) consists of a variety of
dumplings, baked and steamed breads, various buns and noodles. A Mandarin
style meal usually includes vegetable dishes, soups, tofu, and fish. The food is
mild in taste and slightly oily. It is frequently fried, stewed or braised and the
common ingredients would be vinegar and garlic.

   Cantonese dishes (or Quangdong- style) were developed until the Ming and Qing
dynasties. Cantonese dished contain varieties of materials, much strange type, and
also paying attention to seasonal changes. These dishes are more colorful, less
spicy and usually stir fried, and preserves both texture and flavor. One of
Cantonese most popular cuisine is the Dim Sum.

   Tea is one of the most famous drink if China. Chinese have been drinking tea
more many generations and more to come. Tea has been transmitted all throughout China and is deeply ingrained in almost every Chinese.

Dim Sum can have two similar meanings. It can mean "touch your heart" or "a little bit of heart." Dim sum is based on Cantonese dim sum. It is good in color, fragrance, taste, and shape. Its characteristic is that the ingredients used are of best quality and plentiful. It has many varieties and the tastes are various. Dim sum suits the needs for everyone and every season in the year. Dim sum is usually eaten on a Sunday morning or afternoon. When you go to eat Dim sum, the first thing you do is pick what kind of tea you would like. A unique characteristic about this cuisine is
that there is to no menu. Waiters/ waitress go up to your table with a cart, and you choose what you want if you want it. There are 4 main groups to choose from. The first group is made up of steamed dishes, such as shrimp or pork dumplings and pork buns. The next group is a variety group. Included in this group are parchment chicken, pickle mustard greens, duck and chicken feet. The third group to choose from contains deep-fried items, such as, egg rolls, rice rolls, pork triangle, etc. The last group is the sweet item or dessert. The sweets are sponge cake, coconut jelly, and delightful custard tarts.
