In the last 15 minutes of the boil I mix some Irish Moss or carageen finings into a cup of boiling water (allowing it to briefly rehydrate) and then toss this into the boil. It helps coagulate (stick together) all the proteins and this helps the whirl pool settling of your boil. The Irish Moss I use comes ground up as a powder. This is good because you have access to a much larger surface area for the same mass addition.
