At boil end I allow the wort to be whirled and then it gets 45 minutes to settle out. I then run off through the counter flow chiller (black looking coil on the right). Here in Pretoria I find that our winter water comes out the ground at about 12°C. Hence I can use it directly to chill the wort to 18-20°C. During summer though it comes out the ground closer to 22°C and so I use the metal coil (on the left) which gets submerged into the ice bath. The ice bath must go after the counter flow chiller. With this setup and adjusting the flow rate of the wort I can easily get down to 18°C exit temperature.
