Bayonne Blues (a reminder of a summer spent in France, and of the delicieux roquefort pizza served everywhere on the SW coast) Ingredients: 2 slices of wholemeal bread Roquefort cheese Walnuts, finely chopped Tomato, chopped Oregano Instructions: Spread the roquefort cheese on the bread, and layer the tomatoes and walnuts on top. Chop up a little more roquefort and sprinkle on top of the other ingredients with a little oregano. Cook. Eat. Mon dieu! Zut alors! |

Mexican Melt Sainsburys provided the inspiration for this one, and there are many many varieties which can be enjoyed if you like Mexican food. Basic ingredients: Flour tortillas 1 jar Tex Mex taco sauce / salsa 1 can refried beans mature cheddar cheese sour cream (alternative fromage frais / 0% fat Total Greek yoghurt) Optional extras: Chillis (chopped FINELY unless you want the roof of your mouth to be taken off) Guacamole (either ready made or mash an avocado up with some cumin and lemon juice) Instructions: Lay two tortillas flat on plate. Spread salsa thinly on each one, and generously heap refried beans into centre of one. Sandwich together and toast, being careful to ensure bread does not burn (due to thinness) Serve with sour cream/fromage frais. |

China Basic ingredients: Thin pancakes (pre-packaged variety will do) Hoi san sauce Plum sauce (again jar variety will do) Thinly sliced vegetables, and/or meat (if you must) Instructions: Lay pancakes flat on plate, thinly spread with Hoi san sauce. Place chopped veggies/meat on pancake, fold and toast. Serve with plum sauce. |
