To
start the year off right, blackeyed peas are a must!
1 lb. blackeyed
peas
1 lb. hot bulk sausage, crumbled and browned
1 can chile peppers, diced
~or~ 1-2 jalapenos, diced
1 onion, diced
Garlic powder, to taste
Cajun or Creole seasoning, to taste
Combine first four
ingredients in crockpot; cover with water (about an inch
above). Cook on low for 8 hours, or high for 4 hours.
About an hour before they're done, season generously.
And
add some cornbread!
2 boxes Jiffy
cornbread mix
1 can cream-style corn
1 can chile peppers, diced
1 cup cheese, shredded
Mix cornbread per
package directions; add corn, peppers and cheese. Bake as
directed until lightly browned.
