Tasty Broiled Chicken with Rice and Veggies

Boneless, skinless chicken breasts are healthy and incredibly easy to prepare. Unfortunately, they're also usually expensive. When the went on sale for half-off in my area, they were cheap enough to become Gamer Food!

Chicken is very versatile; I served Lemon Dill Chicken and Barbeque Chicken, but there are all sorts of other ways you could season it, depending on what's in the house. Some suggestions are below.

Ingredients

  • ~5 lb. boneless skinless chicken breasts
  • Sauce
  • 2 cups rice
  • 2 lbs frozen vegetables
Preparations
Preheat oven to BROIL. Remove any remaining fat from chicken, if desired.

Cooking
Place the chicken breasts in a baking pan. Do not crowd them together.

Season chicken breasts with sauce; turn over and season other side.

Place in oven on a rack about halfway down. (Usually one broils near the top of the oven, but my food always burns when I do that). Cook for 25-30 minutes, then turn breasts over and cook for about another 25-30 minutes.

When you turn the chicken, start cooking the rice. Rice is only supposed to take 20 minutes, but I always find that large batches take closer to half an hour.

When there's about 10 minutes to go, heat up the frozen vegetables.

Before serving, check to make sure the chicken is done. Cut into the largest breast at the thickest part and make sure it is white and not pink.

Time - About an hour

Served four gamers with a huge amount of leftovers. (It snowed and half the group didn't show).

Some Sauce Suggestions

  • Barbeque - straight from the bottle. Very easy and popular.
  • Lemon Dill - Pour a few tablespoons of lemon juice (fresh or bottled) over the chicken. Sprinkle with fresh or dried dill (use less of dried), salt and pepper to taste.
  • Sesame Chicken - Dot chicken breasts with sesame oil (in the Asian section of your grocery store). You don't need a lot; rub oil on chicken to spread it around. Sprinkle with sesame seeds, if desired. Tell your friends you got to rub oil on some breasts.
  • Butter - Just place a half-pat of butter on top of the chicken breast. It will help the breast brown nicely for plain chicken-flavored chicken.
  • Honey Mustard - Mix a few tablespoons of dijon mustard with honey to taste.
  • Italian - Italian salad dressing is the wonder condiment that works wonders. You can put this stuff on almost any meat you care to cook.
