| Marinated London Broil with Mashed Potatoes and BroccoliThis was another "on sale" special. London broil is a pretty tough cut of meat, so you'll want to marinate it for 24 hours before you cook it. Any marinade you like will do; I used 2 batches of make-it-yourself Italian salad dressing because it's cheap and easy.I was afraid that the instant mashed potatoes would taste bad, but I thought they were actually very good - maybe it's years of college dining hall brainwashing. But it sure as heck beat scrubbing, peeling, boiling, and mashing enough potatoes to feed everyone. Ingredients 
 The night before your game, lay the steaks out in a shallow pan. Prepare Italian dressing or other marinade according to directions; pour over steaks. Turn steaks over so that both sides are coated. Cover the pans with plastic wrap or foil and store in refrigerator. Some people prefer to seal the steaks in large zip-locking bags with marinade inside, rather than use pans. The night of the game, preheat the oven to BROIL. 
Cooking
 Cooking time will depend on how done you want your meat. 10-15 minutes per side resulted in some mediumish steaks in my oven. Yes, per side - flip the steaks halfway through cooking. Follow the directions to make about ten servings of instant mashed potatoes and heat up the broccoli. Time - About 30 minutes 
Serves 7 with an entire steak left over.
