Buy 2 pounds low fat meat and ask the butcher to slice it thin. Mix the following in a large bowl: half cup soy sauce, half cup brown sugar, quarter cup worstechier, 2 tablespoons liquid smoke, 1 tablespoon chilli powder, 1 teaspoon garlic salt, Throw in the meat, ensure it is all covered my the marinade. Marinade meat in refrigerator for 24 hours. Lay all of the meat onto the dehydrater racks. sprinkle black pepper on top while wet. Let dehydrate till it's tough, slightly brittle, and there is no pink inside. It takes me about 12 hours. | ||||||||
So many people have asked me for my variations, I decided to post them rather than emailing them to everyone. First of all everyone asks me about dehydrators. All I know is that it should have a blower in it, not just a big wire that gets hot, as long as it has a blower you are fine. The best advice I can give to everyone else who loves jerky is to experiment! Other than that here are some things I put into different batches of jerky: Garlic salt, Pizza seasoning, Italian seasoning, lemon pepper, crushed red pepper, chilli powder, pineapple juice, and anything that smells good in the spice rack. Here's what NOT to try: Anything with fat, Anything greasy like A1, Plain salt (Soy sauce is enough). One more thing. Dehydrating other meats is really no different. You marinade it, dry it, and eat it. Tastes will vary from meat to meat, but chances are your first batch of jerky won't taste to great anyways :) you need to give it a few tries to find what you like.
