Dijon-White Wine Chicken
What you'll need:
- about 1 pound boneless, skinless chicken breasts
- a bottle of dry white wine
- dijon mustard
- fresh garlic
- fresh, sliced mushrooms
What to do:
Well, this one's a little tougher to share, because I don't measure anything with this recipe, but I'll try. In a baking dish, combine several large spoonfuls of the mustard along with about 1/3 of the bottle of white wine. Mix it together real good! Now press in 4 or 5 garlic cloves. With a fork, poke some holes in the chicken breasts. Place them in the sauce and cover tightly with plastic wrap. Let this sit in the fridge for a couple of hours (at least 2, preferably 3).
Pre-heat the oven to 375 degrees. Add the sliced mushrooms into the mixture. Remove the plastic wrap and place the baking dish AS IS into the over. Bake 30 - 40 minutes, or until chicken is done.
The dijon-wine sauce should thicken nicely. Serve with white rice, a veggie and the rest of the wine! Enjoy!!!
