PORCUPINES
Ingredients
|
500g Mince Meat
2 Rashers Bacon
½ Cup Cooked Rice
½ Cup Breadcrumbs |
1 Egg, Beaten
1 Onion, Chopped
1 Tin Tomato Soup
1½ Cups Water |
Mix together all ingredients, except for soup and water. Shape into balls and place in a greased casserole dish. Mix soup and water, pour over balls. Cover and bake in a moderate oven for 1½ hours. Can also be cooked in the microwave. |
FETTUCINE
Ingredients

250g Fettucine
4 Cups Hot Water
1 Tablespoon Butter
1 Chopped Onion
3 Chopped Bacon Rashers |
¼ Cup Cream
1 Tablespoon Grated Parmesan Cheese
2 Tablespoons Chopped Parsely
½ Teaspoon Black Pepper |
Microwave fettucine in water on high for 8-10 minutes, drain. Melt butter. Add onion and bacon. Cook 4 minutes on high. Add cream, parmesan cheese, parsely and drained fettucine. Cook 2 minutes on high. Serve with extra parmesan. |
TUNA MORNAY
Ingredients

40g Butter
1 Diced Onion
¼ Cup Flour
1 Teaspoon Dried Parsely
Pepper
½ Teaspoon Prepared Mustard |
1½ Cups Milk
1 Tin Tuna
1 Tin Corn (drained) or Creamed Corn
Bread Crumbs
Grated Cheese |
Melt butter and microwave with onion for 1 minute on high. Add flour and cook 1 minute on high. Add pepper, parsely, and mustard. Gradually blend in milk. Cook 4 minutes on high, stirring halfway. Fold in tuna and corn. Pour into dish, top with breadcrumbs and cheese. Cook 4 to 5 minutes on high. |
SCONES
Ingredients

2 Cups Self Raising Flour
3 Teaspoons Sugar
½ Teaspoon Baking Powder

¼ Cup Cream
1 Cup Milk
Extra Milk |
Mix flour, baking powder and sugar. Add cream and milk. Roll out and cut into shape. Coat with extra milk. Bake in a moderate to hot oven (210°C in a fan forced) until golden brown. |
MICROWAVE CHOCOLATE FUDGE PUDDING
Ingredients

1 Cup Self Raising Flour
2 Tablespoons Melted Butter
2 Tablespoons Cocoa |
½ Cup Sugar (¾ cup extra sweetness)
¾ Cup Milk
Vanilla Essence |
Sift flour and cocoa. Add sugar, stir in milk, butter and vanilla essence. Pour into dish. |
Topping
|
½ Cup Sugar (¾ cup extra sweetness)
2 Tablespoons Cocoa
1¾ Cups Boiling Water |
Mix together and pour over pudding mixture. Cook 8 minutes on medium/high. Serve with cream or custard. (Sauce will be under pudding). |
CHOCOLATE CAKE
Ingredients

1 Cup Self Raising Flour
1 Cup Castor Sugar
1 Teaspoon Vanilla Essence
3 Tablespoons Cocoa |
3 Tablespoons Butter
1½ Cups Milk
2 Eggs |
Beat all ingredients for 4 minutes. Bake in a 20cm cake tin for 45 minutes in a moderate oven (180-200°C). |
BANANA CAKE
Ingredients

1 Cup Mashed Bananas
1 Cup Brown Sugar
2 Eggs, lightly beaten |
6 Tablespoons Melted Butter
1½ Cups Self Raising Flour
2 Tablespoons Milk |
Combine sugar, bananas, eggs and butter. Fold in flour and add milk. Pour mixture into microwave ring cake container. Cook for 10 minutes on medium/high. Remove and cover with plastic wrap for 5 minutes. Turn cake out and cool. |
Icing
|
1 Cup Icing Sugar
3 Tablespoons Butter |
3 Tablespoons Cream Cheese
3 Tablespoons Melted Dark Chocolate |
Beat butter and cream cheese. Gradually add icing sugar and melted chocolate. Beat until light and fluffy. Spread over cake. |
SWEDISH CAKE
Ingredients

2 Cups Sugar
3 Eggs
1 440g tin crushed pineapple (undrained) |
2 Teaspoons Vanilla Essence
2 Cups Self Raising Flour
½ Cup Flaked Almonds |
Mix ingredients in order. Bake at 180°C (350°F) for 40-45 minutes in lined lamington tin. |
Icing |
250g Cream Cheese
1¾ Cups Icing Sugar |
125g Butter
1 Teaspoon Vanilla Essence |
Mix together and spread over cake when cool. Top with ½ cup flaked almonds. |
LEMON AND PINEAPPLE CHEESECAKE
Ingredients

125g Butter
180g Sweet Plain Biscuits
250g Cream Cheese
1/3 Cup Sugar |
1 Lemon (juice and rind)
2 Eggs
1/3 Cup Flour
450g Crushed Pineapple (drained) |
Melt butter and mix with biscuits. Press into pie plate and refrigerate.
Mix cream cheese and sugar. Add juice and rind of lemon, eggs, and flour. Fold through pineapple and pour onto biscuit base. Elevate and microwave 10-11 minutes on medium. Chill before serving. |
MARS BAR SLICE
Ingredients

3 Mars Bars
3 Tablespoons Butter
2 Cups Rice Bubbles |
Melt Mars Bars and butter for 3 minutes on defrost in the microwave. Add Rice Bubbles. Press into dish and cool. |
CHOCOLATE SAUCE
Ingredients
|
2 Tablespoons Cocoa
½ Cup Sugar
½ Cup Milk |
1 Tablespoon Butter
1 Tablespoon Golden Syrup
Vanilla Essence |
Mix cocoa and sugar, blend with milk gradually. Add butter, vanilla and golden syrup; heat. Simmer for 3-5 minutes. Chill. Longer boiling will produce a thicker sauce. |
2 MINUTE MAYONNAISE
Ingredients

½ Tin Condensed Milk
½ Cup Vinegar
1 Teaspoon Dry Mustard |
Mix all ingredients thoroughly. Stir until mixture thickens. Let stand for a few minutes. Test for individual taste. |
