Paczki

The Cadillac of Raised doughnuts (Like a jelly bun)
In our family tradition Fat Tuesday meant Paczki day. Years back many people made paczki as a way to use up the extra fat, eggs and rich jams around the house so they would not go to waste, or tempt those in the household during Lent when many people fast. Hmmm, they're so good!

A Fat Tuesday Delight!

2 cups of milk
1 cup sugar
1/2 cup shortening
1 1/2 tsp. salt
1 cup mashed potato
1 1/2 pkg. yeast
1/4 cup warm water
3 eggs well beaten
8 cups flour


Scald the milk, add sugar, shortening, salt and potatos. Stir and cool until luke warm. Meanwhile, dissolve yeast in warm water and let stand five minutes. Add potato mixture and eggs. Mix, gradually add flour stirring well after each addition. Scrape into a greased bowl and cover. Let rise in a warm place until it holds the impression of your finger when touched lightly. Punch down to release air bubbles. Roll on lightly floured board to 1/4 inch thickness. Cut with a doughnut cutter. A glass, floured lightly with about a 3 inch diameter works fine. Place on floured board and cover with a dish towel. Let rise until double in bulk. Fry in at least 1 inch of hot fat 375 degrees until golden on both sides. You will have to flip them over. Drain on absorbent paper. They can be filled with your favorite jelly and sugared while still warm.

Yields about 6 dozen. Don't worry about the amount because they will all go!
