Cooking for 1 or 2

Freezing For One Or Two
Wrap serving size portions of bacon, hot dogs, chicken, and other
larger than needed packages of meat in heavy duty aluminum foil,
label and freeze.  Individual portions will be ready to go when you
need them.  This way you can buy in bulk and reap the savings!
Don't forget to LABEL the packages and include what it is,
how many there are and the date you bought it.

To Make a Vegetable Packet
Start with one sheet (18x24-inches) of heavy duty aluminum foil, place
fresh vegetables on the upper half of the foil and fold foil up to
form a packet.  Now fold over about 1/2 to 1 inch of each side
and the top to seal it.  If cooking vegetable packets and main
dish packets in the same oven, the cooking time may take
five minutes longer than the recommended recipe time.

Ice Cubes and Foil Packets
Some vegetables need a little extra water to steam them to perfection.
For these vegetable packets, just add one or two ice cubes. The foil
packet holds in the heat while the ice cubes melt, providing just
enough moisture to cook the veggies until crisp-tender.

Plan Your Meals for the Week
You may think that you are not organized enough to plan what
you're going to eat several days in advance.  You plan what
you're going to wear to the party next week, don't you?
Eating is a bit more important than a party, so let's stop
making excuses and start doing it!  So, on the day you
usually do your weekly shopping, before you sit down
to make your shopping list (you DO make a shopping
list, don't you?), decide what you want to eat for the week.


Monday Columbian Chicken
Tuesday Spaghetti
Wednesday Meatloaf
Thursday Chicken salad and soup
(use the leftover chicken from Monday)
Friday
Reservations at the Carriage Trade
or grilled steak and baked potatoes
Saturday Steamed cod with rice and vegies
Sunday Catch-as-catch-can

Now go buy the ingredients for all that.
Note: Grocery shopping while you are hungry will
greatly increase the possibility of you buying on impulse.
To stay within your grocery budget, have something
to eat before you shop.

Cook When You Have Time
 I usually do much of my cooking on Sunday while I'm doing the
laundry.  I might make a huge pot of spaghetti sauce and, after it cools,
I divide it into zip-lock freezer boiling bags.  I cook up a pound of
spaghetti pasta, as well, and divide it the same way into seperate bags,
pop them in the freezer and whenever I want a quick, no-mess meal,
it's ready.  Dendy usually gets home before I do, so he always has
something to eat when he wants it.  Gotta keep my man happy!
