
Salads

These recipes come from my sister, Sandy. So far I've only been able to talk her out of three recipes (check out her yummy chicken soup recipe), but hoping she'll add more. I know she's a good cook!!!

MEXICAN SALAD
Cooked chicken, chunked (leftover is fine, just don't skimp)
One can whole kernel corn (drained)
One can black beans (drained)
One jar salsa (hot, mild or sissy)
"Prefer the hot, but my tummy insists on sissy."
Add to taste: cut up green onion, tomatoes, green pepper, etc.
Anything else you want to add like olives, chili peppers, etc.
CHILL and serve on a bed of whole leaf lettuce with tortilla chips on the side.

HOT SAUCE
1 1/2 Tablespoons Worchestershire sauce
1 Tablespoon hot sauce
1/2 cup vinegar
1 Tablespoon garlic powder
25 or more fresh hot peppers
1 Tablespoon honey
32 oz. bottle ketsup
Grind peppers in a blender or food processor. Mix all ingredients in a bot and bring to a boil. Cool and bottle.
NOTE: Glass salad dressing bottles with plastic lids work great, just make sure they are good and clean.
