Ingredients

12 young leeks
8 oz plain flour
4 oz suet
1 tsp baking powder
2 oz butter
salt and pepper

Method

Trim the leeks and wash well to get rid of any grit. Cut into one inch lengths.

Make the crust by combining the flour, baking powder and suet with sufficient water to bind together.

Cut off a piece for the lid and use the rest to line a greased pudding basin. Fill with the leeks and butter, season well and cover with the pastry lid, sealing well with a little water.

Cover with greaseproof paper and steam for 3 hours.

Ingredients

1 lb split peas
seasoning

Method

Wash the split peas and place in a muslin bag with the cut up potato.

Simmer for a couple of hours in the stock until the peas are soft.

Mash up in a bowl with a little stock and serve hot or cold.

Lovely fried or on bread and butter.
