Ingredients
12 young leeks Method Trim the leeks and wash well to get rid of any grit. Cut into one inch lengths.
Make the crust by combining the flour, baking powder and suet with sufficient water to bind together.
Cut off a piece for the lid and use the rest to line a greased pudding basin. Fill with the leeks and butter, season well and cover with the pastry lid, sealing well with a little water.
Cover with greaseproof paper and steam for 3 hours.
