Recipes ~
These are recipes that were passed down to me by family and friends, at the dinner table and on the farm, on the fly and through the 'net. Pass them along and enjoy :)
Recipes
Roast Chicken
- Preheat oven to 350, stuff chicken with chopped garlic and onions
- Tie wings and legs on either side
- Brush with butter, rub in salt
- Can cover with coarse cloth while roasting
- Roast 20 min/lb
- Baste every 10 min after the first 30
- Carve legs by searching for joints first, bend wings back
Lauren's Recipes
Sweet Potatoes
- Raw Sweet Potatoes, soaked in hot water then rinsed
- Quarter potatoes lengthwise
- Slice into quarter-moons or less
- Chop onions or leeks into 1/2" pieces
- Sautee onions alone in olive oil or butter until translucent
- Put 1/3" water in bottom of pan on high heat with oil and onions
- Bring almost to a boil then lower heat, continue stirring
- Add sweet potatoes, cover with tight-fitting lid
- Steam until pretty soft
- Add herbs - handful of sage, 2 cloves of garlic, pinch/light dusting of nutmeg
- Stir and recover
- Total Cook Time: 30-45 minutes, low heat
Roast Potatoes
- Chop, put in bowl, sprinkle with olive oil
- Salt (speeds up cook time for Everything except beans! Only add salt to beans after they cook)
- Stir bowl, add rosemary, sage, garlic (potatoes should be covered) and stir
- Put in pan in the oven @ 450
- Total Cook Time: 30 minutes
Kale
- Darkest kale is preferred (blackstrap, dinosaur, tuscan), submerge in water to wash
- Chop off stems (where leaf starts)
- Cut into 2" chips to fill a 9x13" area
- Line pan with olive oil on medium heat, put kale right in
- Don't add water, don't cover
- Bottom leaves cook first, salt, Keep stirred so top leaves cook
- Add garlic (use garlic press) once kale is Bright Green
- *Don't cook too long*
- Can add splash of tamari, soysauce, or rice vinegar
- Total Cook Time: <10 minutes
Waldorf Slaw
- Cube 3 apples, shred 3 carrots, finely chop 1/2 head purple cabbage
- Mix carrots and cabbage, THEN add apples and lemon juice to preserve fruit
- Add cinnamon (more than you think), a handful of chopped walnuts, 1/2 cup yogurt or vegenaise, 1" cub. ginger shredded, and some sugar (or honey mixed with water)
- Put in freezer for 15 minutes to cool, or if it's for the next day, leave it in the fridge
Andrea Schwartz's Recipes
Pasta Sauce
- Prepare diced tomatoes (maybe also tomato paste), chop an onion, mushrooms, and broccoli
- Sautee veggies first, then add tomatoes and basil, oregano, salt, pepper, any preferred spices
- Heat until soft
Ken's Recipes
Garlic Thai Soup (From Still Life)
- 4-5 tbsp garlic
- 2+ tbsp peanut oil or butter
- 6 cups stock/water
- 4-5 tsp soy sauce
- 1 tsp salt
- 3 c coarsely shredded cabbage
- 2 medium carrots
- 1 stalk chopped celery (optional)
- A few sliced mushrooms (opt)
- Crushed red pepper (opt)
- Sautee garlic, add rest, bring to boil
- Cover and simmer 10 min until veggies are tender
- *Ken's Notes > More garlic OK, less water (4-5c) = more thick, grayish color from working in iron pot, YUM!
Danielle's Recipes
Chocolate Beet Cake
- 4 oz unsweetened chocolate
- 1 c vegetable oil
- 3 eggs
- 1 1/3 c sugar
- 2 c pureed beets
- 1 tbsp vanilla
- 2 c flour
- 2 tsp baking soda
- 1/4 tsp salt
- Heat oven to 375, oil and flour pans
- Melt chocolate on stove top, mix in 1/4 c oil first
- Beat eggs and sugar until fluffy
- Slowly beat in 3/4 c oil, chocolate, beets, vanilla
- Sift dry together and mix just 'till combined
- Bake 30-45 minutes
- "A tale that begins with a beet ends with the devil..."
Carrot Cake
- 3 c flour
- 3 c sugar
- 1 tsp salt
- 1 tbsp baking soda
- 1 tbsp cinnamon
- 1 1/2 c vegetable oil
- 4 eggs
- 1 tbsp vanilla
- 1 1/2 c walnuts
- 1 1/2 c coconut
- 1 1/2 c pureed carrots (~1lb)
- 3/4 c drained pineapple
- Beat oil, eggs, and vanilla
- Sift dry, mix with wet
- Fold in nuts, coconut, pineapple, carrots
- Bake at 350 for 50 minutes in 8" round pan
Cream Cheese Frosting
- 1 pack cream cheese
- 6 tbsp butter
- 3 c confectioner's sugar
- 1 tsp vanilla
