"Miracle" Vegetable Soup

This soup is based on the old "Miracle Diet Soup", and while I would never follow that particular diet again, I really do enjoy the soup.

1 medium head of cabbage, chopped
2 green peppers, diced
4-5 large carrots, chopped
6 medium onions, copped
1 small bunch celery, chopped, leaves included
2 envelopes of onion soup mix (I try to use low sodium mix)
2 large (26 oz)cans of crushed tomatoes OR 6-8 large fresh tomatoes, chopped
5-6 cloves fresh garlic, minced
salt & pepper for seasoning
about a handful of fresh chopped parsley

Place vegetables and garlic in a medium to large soup pot, cover with water to about 2-3 inches above vegetable level. If using fresh tomatoes, place them in pot now, if using canned they will go in later. Add soup mix and boil for about 1 hour, till vegetables are fork soft. Add tomatoes if using canned, parsley and salt & pepper to taste. I like to use freshly ground sea salt and black pepper when I cook, just remember that freshly ground pepper has a stronger kick than the predone stuff.

If your looking to add more fiber and nutrition to your diet, you can also add freshly ground flax seed to your soup. To keep it's health properties intact, add the flax seed to your soup just before serving.
