![]() Shellfish appears to go up and down market with the cycles of history. Oysters were a staple of the Romans in Britain and must have been common enough in Victorian times to be buried in suburban gardens for excavation a century later. Now that oysters are being farmed, they may loose their "toffish" image and find their way back into recipes such as Lancashire Hotpot.
