Herbs and Spices.  Herbs are typically the leaves of plants with proven culinary use, e.g. parsley, sage, rosemary and thyme.  I understand that a botanist might call a leafy plant ranging in size from a few inches to something that would make a decent hedge as a herb, but not a tree.  Spices are any bit of a plant which has been dried and crushed into a powder.  For example, saffron is derived from the stigmas of the crocus and cayenne pepper and paprika from various varieties of capsicum.
