If you are really keen, the only way to be confident that you have the oven is at the correct temperature is to measure it with an oven thermometer.  However, for most purposes it is safe to rely on the thermostat settings.  Its more important to take care on where you place food in the oven, assume that the middle is what you set (e.g. Mark 5), that the top will be hotter and bottom will be cooler.  Older recipes dating back to the days when ranges were common often describe the temperature required (e.g. slow).  A rough equivalent is shown in the lower table.
