Use your mushrooms effectively. Turboing across the desert can put you ahead more times then not, if you know the lay of the land:
Right after the start line. Turboing through the desert can get you across the first set of tracks before any pesky trains show up.
In between the first and second train crossings. Rocket straight across the desert instead of sliding your way around the turn.
After the second crossing. There is a large stretch of track that can be bypassed with a super mushroom.
Before the finish line. Don't waste your time following the winding road...take a straight line path via a mushroom from the ending of the straight part
of the track to the finish.

This trick requires a star. At the second rail crossing, turn left and follow the tracks until you reach the tunnel (see red dots above). As you enter the tunnel, immediately activate the star, and at some point in the tunnel, your lap counter should increase by one (note: unfortunately, this does not work on 3rd lap.)

Variant: A spiny shell can also be used to perform the Kalimari shell trick. Using a spiny shell dramatically increases your odds of clearing the fence, as you can run into the spiny shell 3 times before it disappears, and the spiny will pop you slightly higher in the air.
