Usually the first thing that I do when I join a game in Starcraft on battle.net is to check the size of the map. With this info, I decide what race would be best. On small maps, I choose zerg. Big maps, Protoss. The exception is Terran, which can adapt to whatever size map really. Then I usually check what my opponents are going to be so I can change my race so that it would be easier for me to prevail. The thing here is to be adept at all the races and know their special abilities and how to use them well.
Then, when the game begins, I set all my SVC's, drones, or probes, on to a different crystal, and make another one. When I have about 7 or 8 of these guys, I usually make a farm of some sort. Next, build more SVC's and then a barracks. Then, another farm and if you have lotsa money, another barracks. When you can pretty much make sure that you have plenty of defenses you can start making the more advanced structures.
