Spinache Salad




Dressing

3/4 Cup large curd cottage cheese
1/8 cup sugar
1/2 T. onion Juice<I have never found a way just to get juice so I just mince it>
1/2 t. salt
1/2 t. Dry mustard
1/6 Cup cider vinegar
1/2 cup olive oil
1/2 T. poppy seed <optional>

Salad

2 bunches Spinache
1/2 bunch Bib Lettuce
1/2 pack lean bacon

Cook bacon and crumble, toss with spinache and lettuce. For Dressing combine sugar, onion juice, salt, dry mustard, vinegar, oil, and poppy seed in seperate bowl. (the dressing turns out best if you prepare ahead of time and refrigerate for an hour, but it is not mandatory) Pour 1/2 of mixture over spinache, and toss. Add cottage cheese to remaining dressing with your fingers mix together, then right before you serve pour remaining dressing over salad and toss.

Serves about four
