Avocado just adds a nice wonderful Mexican touch to this delightful green ensalada. This version is
quite popular along the coast resorts along Mexican beach. You can use any type of greens to your liking.
Mixed Salad with Avocado Dressing or Ensalada Mixta con Aderezo de Aguacate - Easy Mexican Recipe For Mexican Food
- 1 large head of romaine (torn into bite-size pieces)
- 1 1/2 avocados (cut into thick slices)
- 5 to 6 cherry tomatoes (cut in halves)
- 3 green spring onions (sliced) - optional
How to make Avocado Dressing
- 2 tbsp mayonnaise
- 6 cloves garlic
- 1 cup corn oil
- 1/2 cup water
- 1/2 avocado (peeled & pitted)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 bay leaf
- 1/2 tsp dried thyme
- 1 tsp lime juice
- 1/4 cup onions (chopped)

How to Make Mixed Salad with Avocado Dressing or Ensalada Mixta con Aderezo de Aguacate:
- How to make avocado dressing: In a food processor, puree the mayonaise, garlic, onion, lime juice,
thyme, salt & pepper, bay leaf, avocado and water
- Add in stream of oil into mixture till it forms an emulsion (about 2 mins)
- Remove and chill in refrigerator
- Arrange lettuce on a platter, top with avocados and tomatoes
- Cover with dressing and garnish with green onions
- Serve immediately
HINT: Avocadoes should be eaten at once. Once exposed to air, the flesh will
discolor. To avoid discoloring, sprinkle with something acid like lime or lemon juice.
