Mexican Vegetable and Salad Recipes

These days the Mexican vegetarian diet consists of maize, beans (red, black, white, multicolored, speckled and striped) as well as cacao, peppers, onions and so much more. These vegetables very often appear in just about every course put on the table except for dessert and even that may be a dish of mashed and flavored sweet potatoes.

Squash has always played an important part in the Meixcan diet. The pepitas (dried seeds) can be eaten plain as snacks or ground out to flavor and thicken may varities of pipianes. There is also the use of squash flowers which is considered a delicacy. The chayote may be bland but combine it with garlic or tomato or chili and it can turn out to be a very interesting dish.

I am reminded of the words of the ancient Mayan leader Huehuetlalli whose words of wisdom rings true regarding the earth and harvesting its bounty:

Take care of things of earth;
do something, cut wood, work the soil,
plant the catcus, plant the maguey.

You will have to drink, to eat, to dress.
Thus you will stand on your feet, be real,
thus you will stride,
thus they will speak of you, praise you,
thus you will be known.
