Burritos is a type of food found typically in Mexican cuisine. Meaning "Little Donkey" in Spanish, it is
usually a type of flour tortilla wrapped and includes various fillings inside.
Pepita Vegetable Burritos - Easy Mexican Recipe For Mexican Food
- 1 cup yellow squash (cut into strips)
- 1 cup zucchini (cut into strips)
- 1 cup broccoli (chopped)
- 1 medium onion (finely chopped)
- 1/2 cup red capsicum (chopped)
- 2 cloves garlic (chopped)
- 1/4 cup pumpkin seeds (shelled, toasted)
- 6 flour tortillas (warmed)
- 1 tbsp lemon juice
- 2 tbsp vegetable oil
- 1 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp cumin (ground)

How to Make Pepita Vegetable Burritos:
- In a pan or skillet, heat oil over medium heat
- Cook the broccoli, onion and garlic in oil till tender
- Stir in rest of ingredients (except tortillas)
- Cook for another 2 mins, till squash is crisp-tender
- Remove and keep warm
- Spoon about 1/2 cup of the vegetable mixture onto center of each tortilla
- Fold one end up, approx. 1 inch over mixture
- Fold right and left sides over folded end, overlapping
- Fold remaning end down
- Serve at once or with your favorite toppings
