Recipe Request from George Curtis
Dear Makiko-san,
Konnichi-wa! I have been a very big fan of Japanese cuisine
for a very longtime (I think I was Japanese in a previous life! :),
often going into town to
enjoy a quick lunch of one of my favourite dishes,
the Guy-Don and warm
sake.
I often start with an appetizer of ebi sushi or, if it's summer,
indulge
in a cool, refreshing suimono salad.
The recipe that I would like to request from you, if you have it, is the
one for the suimono salad. The type often served where I
live, on Canada's west coast, consists of a clear
vinegar-like base, with noodles (I don't know what type),
thinly-sliced cucumber and small ebi.
salad, but have never had any luck, even on the net!
I find the base of this salad refreshing and invigourating,
especially during the hot summer months. Your help would
be very much appreciated.

I think you're talking about "SUNOMONO' which literally means
VINEGAR THING not "SUIMONO" which means SOUP THING.
And I have a recipe! I'm not really sure about what kind of noodles
they use in your favorite restaurant so I just put my favorite recipe
which contains clear "bean thread."
Anyway, once you learned to make sunomono-base,
you can use almost any ingredients!
You might want to ask the person in the restaurant what kind
of noodles they are.
