Abou Ben Adhem (may his tribe increase!)
Awoke one night from a deep dream of peace,
And saw, within the moonlight in his room,

(My inclusion of this poem is simply because my father loved it and knew it by heart and my mother quoted it in an annual obituary notice to this lifelong atheist which was published in The Croydon Advertiser)

Couscous recipes
1)
Ingredients:
2 cups couscous
3 cups water
1-3/4 cups raisins
boiling
water to cover
2 Tbsp butter
1 onion, chopped
4 Tbsp
slivered blanched almonds
1/2 cup chopped dried apricots
2
Tbsp cinnamon
1/2 tsp turmeric
1 tsp ground ginger
sea
salt to taste
3 Tbsp honey
2 oranges, peeled, white membranes
removed, chopped
Instructions:
Place the couscous in a bowl and pour on the water. Let sit while you prepare the remaining ingredients.
Place the raisins in a bowl and pour on boiling water to cover. Let sit 15 minutes, then drain and retain the soaking water. Add water to measure 2 cups.
Heat the butter in a heavy-bottomed, lidded saucepan, or in the bottom of a couscoussiére. Sauté the onion over medium-low heat until it begins to turn golden. Add the raisins, almonds, dried apricots, spices, honey, and soaking liquid from the raisins. Cover and simmer 25 to 30 minutes.
Meanwhile rub the couscous between the palms of your hands, then place in the top part of the couscoussiére or in a steamer above the simmering sauce and steam 25 to 30 minutes. Transfer to a platter and toss with the sweet, spicy sauce and the oranges. Serve at once.
Yield: Serves 8 generously

1 small green bell
pepper, chopped
1 small red or yellow bell pepper, chopped

1 cup chicken or vegetable broth
1 cup
couscous
1 teaspoon finely shredded lemon peel

lemon juice
Spray a medium saucepan with vegetable oil. Place over medium high heat. Add bell peppers and garlic. Cook until tender, about 5 minutes. Stir in broth. Bring to a boil over high heat. Add remaining ingredients, stir and remove from heat. Cover and let stand 5 minutes or until liquid is absorbed.

1 1/2 cups hot water
1/4 teaspoon salt
1 cup
uncooked couscous
1/2 cup frozen orange juice concentrate,
defrosted
2 tablespoons white wine vinegar
1 tablespoon sugar

tablespoon vegetable oil
1 teaspoon grated orange peel
1 cup
fresh blueberries
1 cup fresh raspberries
1 cup fresh
strawberries, hulled and cut in half
1 fresh peach, pitted and cut
into 1/2-inch chunks
1 fresh plum, pitted and cut into 1/2-inch
chunks
1/4 cup fresh mint leaves
Combine water and salt in
2-quart saucepan. Bring to boil over medium-high heat. Stir in
couscous. Cover. Remove from heat. Let stand for 5 minutes.
Fluff
couscous lightly with fork. Place in medium mixing bowl. Set
aside.
Combine concentrate, vinegar, sugar, oil and peel in
2-cup measure. Blend well with whisk. Add half of juice mixture to
couscous. Mix well. Cover and chill at least 1 hour.Combine

1 1/2 lb Tofu, cubed
1 ea Onion, chopped
1 c Sliced carrots
1 c Sliced celery

3 tb Oil
1 cn Chickpeas
1 cn Tomato sauce
1/2 c Raisins
2 ts Curry powder
1/4 ts Cayenne
1 ts Paprika
1 ts Salt
1 1/2 c Water
2 tb Oil
1 c Couscous
Vegetable mixture: In large pan, brown tofu, onion, carrots, celery,
mushrooms, nuts in 3 T. oil. Add remaining ingredients, bring to
boil, cover andsimmer for 40 minutes. Couscous: Boil 1.5 c. water
with 2 T. oil. Pour over couscous, stir, cover, let stand for 5 min.
or until water is absorbed. Serve vegetables over steaming couscous.
