  WATERMELON SLUSH  

Refreshing Summer Quencher!

4 cups cubed and seeded chilled watermelon
2 tsp. lime juice
2 tsp. sugar

Place all ingredients in a blender and puree until smooth. Can be served over ice. Yields 4 servings.

Watermelons, a source of water for ancient Mediterranean traders, provide good amounts of vitamins A and C.

  PAPAYA FRITTERS  

Yummy Tropical Dessert!

2 cups half-ripe sliced papaya
2/3 cup milk
1 1/2 cups flour
1 egg
2 tsp. baking powder
1/3 tsp. salt

Beat together the egg and milk. Add to sifted dry ingredients. Add papaya and mix well. Using a tablespoon, drop mixture into hot oil and deep fry until golden brown. Roll into sugar of your choice.

Papayas, considered a berry by botanists, are high in fiber.

  BANANA COCONUT CUSTARD  

Delicious Desert Recipe!

2 eggs
2 cups milk
4 tblsp. sugar
1 cup sliced, very ripe bananas
¾ cup fresh grated coconut (can substitute packaged coconut)
¼ tsp. vanilla
dash of salt

Beat eggs slightly, add other ingredients. Pour into lightly buttered baking dish. Bake at 300 - 325 degrees for about one hour or until inserted knife comes out clean. note: As with other baked custards, place baking dish in a slightly larger flat pan half filled with hot water.

  CHOCOLATE WALKING BANANAS  

Tasty Treat for Kids!

4 bananas
1 cup flaked coconut
1 can Hershey's chocolate syrup (refrigerated)

Cut bananas into fourths. Insert half of a skewer stick into each piece. Dip in chocolate syrup, then sprinkle with flaked coconut. Good as a snack or dessert.

Bananas, the world's largest herb, are a great source of potassium.

  PINEAPPLE PICKLES  

Tropical Alternative to Pickles!

3 cups white vinegar
3 cups sugar
3 tblsp. whole cloves
3 cups water
1 stick cinnamon
2 medium sized pineapples

After peeling the pineapples, cut them into sections about 1 inch thick. Remove the core and combine with sugar, vinegar, and water. Add the spices and boil gently in a covered pot for 1 ½ hours or until tender. Pour into hot sterile jars and seal. Yields 5 cups.

Pineapples, a symbol of hospitality, and once so rare they were called "the fruit of the kings," have their own powerful tenderizer, an enzyme called bromelain.

  STUFFED LYCHEES  

Great for Appetizers!

1 can whole lychees
few drops of lemon juice
1 pkg. cream cheese (8 oz.)
cherries (cut in half)
1/2 cup chopped macadamia nuts

Drain lychees. Mix cream cheese with lemon juice and chopped nuts. Fill cavity with a small portion of cream cheese mixture. Top off with half a cherry.

Lychees, whose trees can live for more than one hundred years, are a rich source of vitamin C.

RUSSIAN FRUIT PUDDING

A Delicious Three Fruit Pudding!

3 apples peeled and chopped
3 pears peeled and chopped
2 plums peeled and chopped
2 cups of water
1 tsp. cinnamon

3 tblsp. potato starch or cornstarch
1/2 cup water

Place chopped fruit, 2 cups water, and cinnamon in a small covered pot. Simmer over medium heat for 20 minutes until fruit is well cooked. Puree and return to pot with dissolved cornstarch in 1/2 cup of water and stir the two mixtures together. Continue simmering for 2 minutes or longer, the pudding will thicken. Pour into 5 small bowls and chill at least 2 hours before serving.
