A Sweet Tooth Fantasy
Desserts
Because of my sweet tooth, I absolutely LOVE desserts. My favorite food is berries, any kind, but in particular, strawberries. To me, there is nothing better than slicing up strawberries with bananas, sugaring them and pouring them over ice cream, pound cake or angel food cake. Anyhow, that is something simple and easy to do, and pretty common I would imagine. In here, though, I have a few family recipes for cakes and other desserts.

If you are from the Midwest, particularly St. Louis, then you have heard of Gooey Butter Cake. If you have never heard of this treat, then I really suggest that you try it out. You cannot miss with this one!!

Gooey Butter Cake

1 yellow cake mix (without pudding)
2 eggs
1 stick melted margarine

Mix and put in greased 9x13x2 pan. Spread on bottom evenly. Next you need to mix

1 8-ounce package of creamed cheese
1 8-ounce package powdered sugar
2 eggs

After thoroughly mixed, pour over batter in the pan. Bake for 30-40 minutes in a 350 degree oven (until golden brown on top).

Another cake recipe I absolutely adore is Spice Cake. Now, this recipe is not what you would typically consider as Spice Cake. No icing. I think this version is much better than the one you find in Betty Crocker.

Grandma Davis's Spice Cake

3 cups flour
2 cups sugar
1 cup Crisco
2 eggs
2 tsp. cinnamon
1 tsp. cloves
1/2 tsp. nutmeg
1 tsp. baking soda
1 cup chopped walnuts

Mix flour, sugar, & Crisco together like pie dough. Then put aside 1 cup of the mixture for topping. Add to bowl the rest of the ingredients with 1 cup sour milk. Put in a 9x13x2 pan. Sprinkle on the cup of set aside mixture and bake in a 375 degree oven for 30 minutes

I believe that most people out there love carrot cake. This is my mom's favorite!! This isn't the simplest of recipes, but it is awfully good.

Deb's Carrot Cake

3 cups grated (coarse or fine) carrots
4 eggs (unbeaten)
2 cups sugar
1 1/2 cups vegetable oil
2 cups flour
1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1 cup chopped pecans

Mix all the above ingredients. Bake at 350 degrees for 40-45 minutes. While it is baking, make the icing.

1 8-ounce package cream cheese
1 lb. powdered sugar
milk, if needed (use sparingly)

This next recipe that I have is a family recipe from the Haberstroh side. It is good, and better than any fruit cake out there. It is usually eaten during the Xmas holidays.

Haberstroh Pork Sausage Cake

1 lb. brown sugar
1 lb. pork sausage (ground)
1 lb. box of raisins (cook for 15 minutes)
1 cup chopped pecans
1 4-ounce can drained crunch pineapple
1 4-ounce jar of maraschino cherries
1 tsp. baking soda
3 cups flour
3 tsp. cinnamon

Cook raisin in 2 cups of water until tender. Put all ingredients in bowl and mix (including raisins). Save raisin juice for the desired consistency of the dough. The dough should be like sticky biscuit dough (best to hand mix). Use spring bottom tube cake pan, or 2 bread pans. Grease pans. If using the bread pans, line them with brown paper. Bake for 1 hour at 350 degrees.

Another favorite from my grandmother is great to eat during the summer when you can find fresh berries. Try it and you'll be hooked!

Grandma Davis's Blackberry Cobbler

3 pkg. frozen blackberries
2 cups sugar
1 Tbsp. flour, heaping Tbsp.
1 Tbsp. tapioca

Coat berries with dry ingredients and pour into a 9x13x2 pan.

For the top mix and pour over the berries the following:
1 1/2 to 2 cups Bisquick
2 Tbsp. sugar
enough milk to thin

Bake at 350 degrees for 1 hour

Another great recipe for the summer, with all those excess plants in the garden, is Zucchini Bread. It isn't too difficult, but may take a bit of practice.

Zucchini Bread

Mix together:
2 eggs
1 cup oil
2 cups sugar
2 tsp. vanilla
2 cups grated Zucchini
Add to that mix:
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
Mix all together then add to it:
1/2 cup chopped nuts
1/2 cup raisins

Makes approximately two loaves. Heat at 325 degrees for approximately 1 hour.

One thing I always looked forward to at Christmas was mom baking my favorite cookies. When I went to college, these cookies were often part of care packages. I have yet to find an oatmeal cookie that measures up, but I'll let you be the judge.

Mom's Old-Fashioned Oatmeal Raisin Cookies

Mix together:
3/4 cup Crisco
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 tsp. vanilla
Add and then mix the following:
1 cup flour
1 tsp. salt
1/2 tsp. baking soda
Fold in:
3 cups oats
1 cup raisins
1 cup chopped nuts

Bake at 350 degrees on a greased cookie sheet (spooning out cookies) for 12-15 minutes. Cool on kitchen towels.
