Pasta

Pasta has to be one of the easiest foods to work with and the easiest to please when you have company. My favorite is spaghetti, but I don't like a meat sauce. I just like it plain and simple. I don't often have the time to make a homemade sauce so I use Prego. In order to make it mine though, I add my own spices. I add some cayenne pepper or a cayenne pepper sauce for a bit of a kick. I also like to add some oregano and extra garlic that has been browned...mmmmm. I'm getting hungry thinking about it. I have also found a fantastic recipe for penne. It is definitely delicious and very easy to make.

Penne with a Spicy Creamy Tomato Sauce

1/4 cup olive oil
4 cloves minced garlic
1 Tbsp crushed dry red pepper flakes
1 28-ounce can of crushed tomatoes
1 lb. penne pasta
1/2 cup heavy cream
2 Tbsp Vodka
1/4 cup fresh parsley

Saute garlic and pepper flakes over a medium heat until golden brown. Add tomatoes. Once the sauce comes to a boil, lower the heat and simmer for 15 minutes. In another pot, you should boil the penne to al dente. Drain and put back into the hot pot. After the 15 minutes is up on the sauce, add the cream and Vodka. Bring to a boil and heat through for one minute. Add sauce to the pot with the penne. Add parsley and stir. Then sit down and enjoy...

The next recipe is my absolute favorite!! It is spicy and different from any other pasta sauce I've had before. It is best when served with chicken tortellini.

Pasta Raphael

2 6-oz jars marinated artichoke hearts in oil
1/4 cup olive oil
2 cups chopped onions
2 Tbsp. minced garlic
1/2 tsp. dried oregano
1/2 tsp. dried basil
1 Tbsp. black pepper
1/2 tsp. salt
pinch of dried red pepper flakes
1 28-oz. can stewed tomatoes, with their juice
1/4 cup freshly grated Parmesan cheese
1/4 cup chopped fresh Italian parsley

Drain the artichoke hearts. Set aside the marinade. Heat the olive oil in a large saucepan. Add the onions, garlic, oregano, basil, black pepper, salt, red pepper flakes, and artichoke marinade. Saute over medium-low heat until the onions and garlic are tender. Add the tomatoes and simmer for 30 minutes. Add the artichoke hearts, Parmesan, and parsley. Stir and simmer for 5 minutes, then serve!
