Chicken Beef Cookies

CANDIES

CHRISTMAS FUDGE

3/4c margarine or butter
3c sugar
2/3c evaporated milk
1 pkg. (12 oz.) Chocolate Chips
1 jar (7 oz.) Marshmallow Cream
1c chopped nuts (optional)
1 tsp. vanilla

      Mix margarine and milk in 2 1/2-3 qt. saucepan, bring to full boil, stirring constantly. Continue boiling 5 min. over med. heat or until candy thermometer reaches 234F, stirring constantly to prevent scorching. Remove from heat and gradually stir in chips until melted. Add remaining ingredients and mix well.

Pour into greased 9" or 13" x 9 " pans. Cool at room temperature and cut into squares. Makes about 3 pounds.


CASHEW BRITTLE

2 cups sugar
1 cup light corn syrup
1/2 cup water
1 stick butter
3 cups cashews
1 tsp. baking soda

In a 3-qt. saucepan, heat sugar, syrup & water, stirring until sugar is dissolved.   When boiling, blend in butter.   Stir constantly after temperature of 230 degrees.   Add cashews at 280 degrees & stir constantly to 305 degrees.

Remove from heat & quickly stir in soda.   Immediately pour onto two buttered cookie sheets.   When cool, loosen from pan & crack into pieces.

CAKES

MANDARIN ORANGE UPSIDE DOWN CAKE

1 stick butter
1 cup brown sugar
1 11 oz. can Mandarin oranges
1/2 cup coconut
1 pkg. Yellow Cake mix
3/4 cup chopped pecans (optional)

Preheat oven to 350 degrees. Heat butter in 9" x 13" pan, until melted. Sprinkle brown sugar in pan and then arrange orange slices. Sprinkle the sugar and oranges with coconut. Prepare cake mix as directed, stirring in chopped pecans. Pour into pan and bake 45-55 minutes. Remove from oven and immediately turn over onto plate.

CHICKEN

CHICKEN & DUMPLINGS

Chicken

4 chicken breasts, skinned
4 chicken boullion cubes

Place boullion cubes in 4 cups of water & bring to a boil.   When water is at rolling boil, add 4 chicken breasts and bring to second boil.   When boiling again, cover immediately & remove from heat.   Remove chicken after 20 minutes.

Dumplings

2 cups biscuit mix
1 egg
1/4 water

Mix above ingredients together.   Add more water, if necessary, to get loose biscuit consistency.   Boil broth, dip teaspoon in broth before adding teaspoonfuls of dumpling mix to hot broth.   Cook 8 minutes w/lid off; reduce heat and cook additional 8 minutes with lid on.

Vegetables

1 bag of peeled carrots cut coarse
1 onion chopped coarse
2-3 celery ribs cut coarse

Sautee veggies in butter, salt & pepper (to taste) cooking on low heat with lid on. DO NOT ADD WATER.

Cook everything separately, combining just before serving.   This recipe was given to me by a friend who, together with her husband, had their own restaurant for 20 years.

COOKIES

ON TOP OF THE STOVE COOKIES

2 cups sugar
1/3 cup cocoa
1 stick margarine
1/2 cup milk

Put above ingredients into a pot, and boil for 1 to 2 minutes on top of the stove.

After boiling - remove from stove and add the following in order as they appear.

1/3 cup peanut butter - mix in well
1 teaspoon vanilla
1 cup nuts (optional)
3 1/2 cups oatmeal (1 minute kind)

After everything is mixed well drop a 1/2 teaspoon of cookie mix onto waxed paper. Cookies are ready to eat when they are dry to the touch and peel easy from waxed paper.

*HINTS*

1) Use crunchy peanut butter instead of creamy if you want nuts in cookies and don't have pecans to add.

2) Only make these cookies on sunny days - if you don't you will have a big mess on your hands - the cookies will NOT set.

Makes 2 dozen cookies or more, depending on how big the cookies are made.

SALADS

BROCCOLI SALAD

2 bunches broccoli - cut bite size
1# bacon fried crisp & crumbled
1c shredded cheddar cheese (I use x-tra sharp)
1 sm. onion - diced
      Mix Well

Dressing:
1c Miracle Whip
1/2c sugar
1T vinegar
      Mix well & pour over broccoli mix. Refrigerate


FRUIT SALAD

1 large can fruit cocktail - drained
2 cans Mandarin oranges - drained
1 can pineapple chunks - drained
Cool Whip
1 bag of Miniature Marshmallows

      Mix all ingredients except Cool Whip together and refrigerate. Just before serving, add Cool Whip.

BREADS

BANANA NUT BREAD

1/2c shortening
1c sugar
2 eggs
      Cream above ingredients together.

      Add:
1c mashed bananas
1 tsp. lemon juice
2c sifted flour
3 tsp. baking powder
1/2 tsp. salt
1c walnuts or pecans

      Beat all ingredients until well mixed. Pour into 1 large or 2 small loaf pans. Bake at 350 degrees for 1-1 1/4 hours. or until toothpick inserted in center comes out clean. Cool on wire racks. Freezes well.


CARROT BREAD w/ PINEAPPLE
(Compliments of Judy/AZ)

2c. sugar
3 eggs
3 tsp. cinnamon
1 tsp. soda
2c. grated carrots
1c. oil
3c. flour
1 tsp. salt
3 tsp. vanilla

Combine all ingredients, except carrots & pineapple.   Mix well.   Add carrots & pineapple, including juice.   Bake at 325 degrees for 1 hour.   Nuts may be added.

SOUPS & STEWS

BEEF STEW

2 pkgs. stewing beef, cubed
2 cans mixed veggies w/potatoes
2 cans Italian Style Stewed Tomatoes
garlic powder to taste
salt & pepper

      Brown beef and drain. Place in slow cooker or Dutch oven. Add remaining ingredients. Cook on medium heat for about 1 hour. Reduce heat and simmer for 4-6 hours, stirring occasionally.


CHILI

2# ground chuck
1-2 cans kidney beans, drained
4 cans Italian Style Stewed Tomatoes
Garlic powder

      Brown ground chuck and drain. Place in slow cooker or Dutch oven & add remaining ingredients. Cook on medium heat for 1 hour; reduce heat and simmer for 4-6 hours. Stir occasionally.

SNACKS

PIZZA BISCUITS

1 can biscuits - generic is fine
1 jar pizza sauce
mozarella cheese
Topping of Choice

      Bake according to directions on can removing 5 minutes before done. With bottom of spoon, press center of each biscuit and add sauce, cheese and topping(s). Return to oven for 5 minutes.


PARTY MIX

1 box Corn Chex
1 box Cheerios
1 bag pretzels
1-2 cans mixed nuts
1# cashews
1# butter
3 tsp. Worchestshire sauce
2 tsp. garlic powder
2 tsp. salt (Optional)

Mix first 5 ingredients together in large roasting pan.   Melt butter, add Worchestshire sauce, garlic powder & salt to butter and pour over mix.   Stir until mix is coated.   Bake in 250 degree oven for 1 1/2 hours, stirring every 15 minutes.   Store in plastic containers.
