Mr. Lee's Dimsum Recipes


Rainbow Rice
INGREDIENTS:
I.
6 C. rice
4-1/2 C. water
5 shallots
1/4 C. dried shrimp

II.
3 oz. pork loin
3 pre-softened Chinese black mushrooms*
1 bamboo shoot
1 medium-sized carrot
1/4 lb. green peas

III.
1-1/2 C. water
1 t. salt
2 T. soy sauce
1 t. MSG
1/2 t. black pepper



6 Servings
PROCEDURE:

  1. Mince shallots; rinse rice until water runs clear; drain. Rinse dried shrimp and dice ingredients in II.

  2. Heat pan and 4T. oil; stir-fry shallots and dried shrimp until fragrant; add Ingredient II, green peas and Ingredients III. Cover and allow liquid to come to a boil; add Ingredient I and let boil 3 minutes covered, over high heat; turn heat to low and cook 7 minutes. Remove and serve.

* Soak Chinese mushrooms in warm water until soft; remove stems, discard and use caps as directed.
