Mr. Lee's Dimsum Recipes
I.
1 T. rice wine
1 t. salt
1/2 t. MSG
1/2 t. sugar
1/4 t. black pepper
1 t. sesame oil
3 egg whites
3 T. water
1 T. chopped green onion
1 T. chopped ginger root
II.
1 pre-cooked bamboo shoot
1/2 C. button mushrooms
3 C. stock
1 t. salt
1/2 t. MSG
3-1/2 T. cornstarch
III.
9 C. stock
2 t. salt
1 t. MSG
1/2 T. soy sauce
2/3 lb. raw, shelled shrimp*
1-1/3 lbs. pre-cooked egg noodles
- Clean and devein shrimp; chop finely and mix with Ingredients I; let soak 20 minutes. Dice bamboo shoot and button mushrooms.
- Heat Ingredients II until boiling; add shrimp mixture. Stir to separate shrimp bits and turn off heat (A).
- Portion noodles and boiling Ingredients III into each serving bowl; add (A) on top. Serve.
* To shell whole shrimp:
Remove head. Peel away shell. Remove tail tip. Devein and rinse; drain.
