Mr. Lee's Dimsum Recipes
I.
1/2 t. salt
1/4 t. rice wine
1-1/2 t. corn starch
II.
1/2 C. diced ham
1/2 C. pre-cooked green peas
1/2 T. chopped green onion
1/2 T. chopped ginger root
III.
9 C. cold, pre-cooked rice
2-1/2 t. salt
1-1/2 t. MSG
1/2 t. black pepper
1/2 lb. raw, shelled shrimp
3 C. boiling water
3 eggs
- Rinse and devein shrimp; drain and mix with Ingrdients I; let soak 20 minutes. Heat 6C. water until boiling; add shrimp, one at a time; when color changes, remove and drain.
- Heat pan and 6T. oil; lightly beat eggs; pour into pan and scramble over medium heat until firm; add Ingredients II and shrimp. Stir-fry until fragrant; add Ingredients III;
stir-fry until ingredients are mixed and rice is hot. Serve.
