Chicken Roll-Ups

Ingredients

4 flour tortillas (10-inch size)
1 tablespoon vegetable oil
12 ounces boneless, skinless chicken, cut into 2" x 1/4" strips
2 teaspoons minced garlic
1 tablespoon rice vinegar
1 tablespoon reduced-sodium soy sauce
1 teaspoon hoisin sauce
Salt and freshly ground black pepper, to taste
4 teaspoons reduced-fat mayonnaise
1/2 cup grated carrots
1/2 cup chopped water chestnuts
1 cup alfalfa sprouts
1/3 cup chopped dry-roasted peanuts
Preheat the oven to 400° F.

Wrap tortillas in aluminum foil and warm 10 minutes.
Heat oil in a large skillet. Add chicken and saute for 1 minute.
Add garlic, and continue to cook, stirring continuously, for 2 minutes longer or until chicken is cooked through.
Add vinegar, soy sauce, and hoisin sauce (found in the ethnic-foods aisle of the supermarket).
Cook until liquid is almost evaporated. Season with salt and pepper.
Take tortillas out of oven and remove aluminum foil. Spread each tortilla with 1 teaspoon mayonnaise, then scatter carrots, water chestnuts, sprouts, and peanuts down the center. Top with cooked chicken.
Fold bottom third of each tortilla toward the middle, then fold sides in toward the center. Starting at the bottom edge, gently roll tortilla to enclose filling completely.

Preparation time: 25 minutes
Cooking time: 10 minutes.
Zesty Cinnamon Roll-ups


Ingredients

1 loaf thin sliced sandwich bread
One 8 ounce package cream cheese, softenes
1 egg yolk
1/4 cup sugar
1 to 2 teaspoons grated orange zest
1/2 cup margarine or butter, melted
3/4 cup brown sugar, firmly packed
1 to 2 teaspoons cinnamon
Mix the softened cream cheese, egg yolk, sugar and orange rind. Remove the crusts from the bread slices. Flatten a slice with rolling pin and spread with a spoonful of the cream cheese mixture. Roll up and seal edges by pinching together. Set aside with the sealed side down and continue until all slices are done. (Save the crusts for another use). Mix together the brown sugar and cinnamon in a shallow bowl and place the melted margarine in another shallow bowl. Cut each bread roll into two pieces. Roll each in the melted margarine and then in the sugar mixture. Place on a greased cookie sheet. (This is a messy process but it can be done ahead of time. They can be frozen at this point too). Bake the rolls in a preheated 350 degrees oven for 15 to 20 minutes. Remove and cool slightly but serve warm if possible. Makes 6 to 8 servings.
